Instructions:
1. Prepare the Pie Crust:
- In a large mixing bowl, combine the flour and salt.
- Add the cold cubed butter to the flour mixture and use a pastry cutter or your fingers to cut the butter into the flour until the mixture resembles coarse crumbs.
- Gradually add the ice water, one tablespoon at a time, mixing until the dough just comes together. Be careful not to overwork the dough.
- Divide the dough into two equal portions, shape each into a disk, wrap in plastic wrap, and refrigerate for at least 1 hour.
2. Prepare the Apple Filling:
- Preheat the oven to 375°F (190°C).
- In a large bowl, combine the sliced apples, granulated sugar, brown sugar, cinnamon, nutmeg, cloves, and lemon juice. Toss until the apples are evenly coated.
- Set aside while you roll out the pie crust.
3. Roll out the Pie Crust:
- On a lightly floured surface, roll out one disk of the chilled pie dough into a circle large enough to fit a 9-inch pie dish. Transfer the rolled-out dough to the pie dish and gently press it into the bottom and sides.
4. Assemble the Pie:
- Arrange the apple filling evenly in the prepared pie crust. Dot the top of the apples with cubed butter.
- Roll out the second disk of pie dough and place it over the apple filling. Trim any excess dough and crimp the edges to seal the pie.
- Cut several slits in the top crust to allow steam to escape during baking.
5. Bake the Pie:
- Place the assembled pie on a baking sheet to catch any drips. Bake in the preheated oven for 45-50 minutes, or until the crust is golden brown and the filling is bubbly.
6. Prepare the Custard:
- While the pie is baking, prepare the custard. In a medium saucepan, heat the milk over medium heat until it just begins to simmer.
- In a separate bowl, whisk together the sugar, cornstarch, and egg yolks until smooth and pale in color.
- Slowly pour the hot milk into the egg mixture, whisking constantly to prevent curdling.
- Return the mixture to the saucepan and cook over medium heat, stirring constantly, until the custard thickens and coats the back of a spoon.
- Remove the custard from the heat and stir in the vanilla extract. Transfer the custard to a bowl and cover the surface with plastic wrap to prevent a skin from forming. Refrigerate until ready to serve.
7. Serve:
- Allow the apple pie to cool for at least 20-30 minutes before slicing.
- Serve slices of apple pie warm, topped with chilled custard.
