Ingredients:

  • 1 pound large shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon red pepper flakes (adjust to taste)
  • Salt and black pepper, to taste
  • 6 cups fresh spinach leaves, washed and stems removed
  • 1 tablespoon lemon juice
  • Zest of one lemon
  • Grated Parmesan cheese for garnish (optional)

Instructions:

  1. Prepare Shrimp:
    • Pat the shrimp dry with paper towels. Season with salt and black pepper.
  2. Saute Shrimp:
    • In a large skillet, heat olive oil over medium-high heat. Add minced garlic and red pepper flakes, sautéing for about 1 minute until the garlic is fragrant.
    • Add the seasoned shrimp to the skillet. Cook for 2-3 minutes on each side or until the shrimp turn pink and opaque.
