Summertime is coming, and with the warm weather come picnics, Barbecues, and neighborhood gatherings. Marinated Cucumbers, Onions, and Tomatoes is a dish that has tons of variations. However, there are none that compare to this recipe. This side dish has a flavor so extreme you won’t be able to make enough. What is more, this dish could be used as a side dish or you could use the vegetables after marinating, in other dishes or salads.

Ingredients :

3 medium cucumbers, peeled and sliced 1/4 inch thick
1 medium onion, sliced and separated into rings
3 medium tomatoes, cut into wedges
1/2 cup vinegar
1/4 cup sugar
1 cup water
2 teaspoons salt
1 teaspoon fresh coarse ground black pepper
1/4 cup oil
Directions:
Combine ingredients in a large bowl and mix well.
Refrigerate at least 2 hours before serving

Instructions :

  • Place the vegetables into a large mixing bowl and toss to combine.
  • Pour the water over the vegetables.
  • In a small bowl, combine the oil, vinegar, sugar, basil and salt and pepper to taste. Whisk to combine well, and pour this over the vegetables in the bowl.
  • Stir to coat the vegetables well and allow to marinate in the fridge for at least two hours before serving.
