The nice thing about this version of chicken and dumplings is that you’re cooking the chicken in the broth, which leaves you with moist chicken and a flavorful sauce. Your goal isn’t really to crisp up the chicken – the flour does help give the chicken some texture, but mainly, it helps thicken the broth later.
