Create the glaze: In a medium saucepan, heat the olive oil over medium heat. Add the minced garlic and sauté for a few minutes, ensuring it doesn’t brown. Stir in the honey, soy sauce, and ground black pepper. Allow everything to simmer for around 20 minutes, stirring occasionally, until the sauce thickens slightly. Take it off the heat and allow it to cool down for a few minutes.

Prep the ribs: Remove the silver skin from the ribs’ back to prevent curling and to let the spice mix flavor both sides. Generously rub the spice mix all over the ribs, then wrap them in plastic wrap and refrigerate for several hours or overnight for enhanced flavor infusion.
Cook the ribs: Preheat your oven to 225 degrees F. Position the ribs on a wire rack over a baking sheet and bake for 8-9 hours, depending on the thickness. During the final hours, brush the glaze onto the ribs, turning them every half hour to establish a sticky glaze.
Serve and savor: Once the meat is tender and detaches effortlessly from the bone, your honey-glazed pork ribs are ready. Let them rest for 10 minutes before serving to allow the juices to settle.
