INSTRUCTIONS:
- Prep the Zucchini:
- Wash the zucchini thoroughly under cold running water. Trim off the ends and slice the zucchini into rounds, about 1/4 inch thick.
- Pan-Fry the Zucchini:
- Heat the olive oil in a large skillet over medium-high heat. Once the oil is hot, add the zucchini rounds to the skillet in a single layer, making sure not to overcrowd the pan.
- Sprinkle the zucchini rounds with salt and pepper to taste. Cook for 2-3 minutes on each side, or until they are golden brown and tender-crisp.
- Add the Cheese:
- Once the zucchini rounds are cooked to perfection, sprinkle them evenly with shredded mozzarella cheese and grated Parmesan cheese.
- Cover the skillet with a lid or aluminum foil and let the cheese melt for 1-2 minutes, until it is gooey and bubbly.
- Garnish and Serve:
- Remove the lid or foil from the skillet and turn off the heat. Using a spatula, transfer the pan-fried zucchini rounds topped with cheese to a serving platter or plate.
- Sprinkle the dish with chopped fresh parsley for a pop of color and freshness.
- Serve immediately while the cheese is still hot and gooey, allowing your guests to enjoy the irresistible crunch of each zucchini round.
