Prepare Apples:
Wash the apples thoroughly under running water to remove any wax coating. Dry them completely.
Remove the stems from the apples and insert wooden skewers or sticks into the stem end of each apple. Make sure the sticks are firmly secured.
Prepare Candy Coating:
In a medium saucepan, combine the granulated sugar, light corn syrup, and water. Stir well to combine.
Place the saucepan over medium-high heat and bring the mixture to a boil, stirring constantly to dissolve the sugar.
Once the mixture comes to a boil, insert a candy thermometer. Continue to cook the syrup, without stirring, until it reaches the hard crack stage, about 300°F (150°C). This usually takes around 15-20 minutes.
Add Flavor and Color:
Once the syrup reaches the desired temperature, remove the saucepan from the heat.
Stir in the vanilla extract and red food coloring, if using. Mix until the color is evenly distributed.
Dip Apples:
Working quickly but carefully, dip each apple into the hot candy syrup, tilting the saucepan as needed to coat the apple evenly.
Allow any excess syrup to drip back into the saucepan, then place the coated apple onto a parchment-lined baking sheet to cool and harden.
Cool and Serve:
Let the candy-coated apples cool completely at room temperature until the candy coating hardens, usually about 30 minutes to 1 hour.
Once the candy coating is set, your old-fashioned candy apples are ready to enjoy! Serve them immediately, or wrap them individually in wax paper for later enjoyment.
